What the Heck is Astaxanthin?

Astaxanthin, pronounced “ASTA-ZAN-THIN” is possibly the most potent antioxidant on earth. Considered 6000 times more powerful than Vitamin C, this red colored phytonutrient which comes mainly from micro-algae along with certain orange and red colored fruits and vegetables is seriously good for your health!

The reason that krill, flamingos, shrimp, lobster, and salmon are pink is because they eat large amounts of astaxanthin-packed algae and phytoplankton. Known as a carotenoid, this powerhouse superfood is shown to reduce inflammation within the body, increase the skin’s protection from the sun when used both internally or topically, and may even lighten sun spots caused by aging.

Like most antioxidants, astaxanthin fights harmful free radicals within the body to assist in healthy cell production. It also has been studied for its ability to minimize muscle damage and improve recovery after exercise along with increasing physical energy in athletes. One of the best sources of astanxanthin is from the tiny crustaceans known as krill. Krill also tends to live deep below the water’s surface in areas where toxicity and pollution is decreased even more.

Taking 4-12 mg of astaxanthin per day is highly recommended by numerous alternative doctors and health experts for its long-term support of overall health and longevity.

We can get overwhelmed by the numerous options of vitamins, minerals, and superfoods on the market but I for one, make astaxanthin a part of my daily supplement regimen.

I have always been a coffee drinker. I love the dark, rich taste and the smell of my morning java. I do my best not to drink caffeine in the afternoons however and searched out an alternative years ago.

Every year the Environmental Working Group (EWG) puts together a new list of which items have the highest levels of pesticides and those which are considered safer for you and your family.

Here is the most recent list that you may want to consider carrying with you during your next stop to the grocery store. Whenever possible, I suggest buying everything organic but if budget is an issue, these lists will help.

The CLEAN 15 have less pesticide and would be okay to buy conventional while the DIRTY DOZEN are those with the highest amount of pesticides and should ALWAYS be purchased organic.

Crispy Kale Chips

Crispy Kale Chips

I was first introduced to these delicious and healthy treats a couple of years ago and they have quickly become one of my favorite snacks. More and more, you can find baked kale chips at health food stores but why not make them for yourself? They’re simple, nutritious and amazing as party snacks!

Kale is part of the cabbage family & is rich in Calcium, Vitamin K, Folic Acid, magnesium, & Beta Carotene. It is always wise to buy organic kale as leafy greens easily absorb pesticides & chemicals more than other vegetables.

Ingredients (Organic only)
1 Head Kale, washed and thoroughly dried
2 Tbsp Olive Oil
Sea Salt, for sprinkling

Directions
Preheat the oven to 275 degrees F or 350 degrees if a shorter cook time is desired.

Remove the ribs from the kale and cut into 1 1/2-inch pieces. Toss with olive oil & sea salt then lay on a baking sheet. Bake until crisp, turning the leaves halfway through, about 25 minutes total on 275 or 15 minutes on 350. Make sure to turn them once the leaves begin to turn brown. Serve as finger food.

*For an extra pop of flavor, add cashew cheese, parmesan cheese, garlic powder, black pepper or cayenne.
